Assistant Head Sommelier Paris

Duration: 6 months
Where: Paris 8th
Language level: french (minimum B1 if foreign), English level B2 and a third language would be a plus
Gratification: legal internship
Advantages: 50% of transportation fees (metro card), 1 staff meal during working hours, 2 non-consecutive days off and split shifts schedulesprobable (work breaks between shifts)

Your duties

Accompanied by the Sommelier, your main duties within the restaurant/department will be as follows: 

  • Be proficient in the wine list and adapt his or her advice according to customer requests; be familiar with the food and drink menu
  • Be responsible for the quality of the drink service in the restaurant
  • Maintain and develop restaurant standards
  • Take orders, prepare the order, and provide service
  • Take note of the customer’s food order and advise him or her on the choice of wines, taking into account his or her expectations, budget, dishes chosen, etc.
  • Be proficient in service in order to assist the dining room staff as needed
  • Participate in preparing aperitifs and help send them out
  • Promote and make additional sales (aperitifs, liqueurs, etc.)
  • Manage the cellar on a daily basis (inventory management, set-up, classification, supplier meetings, etc.)
  • Be responsible for the tableware, glassware, equipment, and linen made available to him or her, ensuring their upkeep and tidiness.
  • Participate in the cleaning of glasses and sommelier equipment
  • Participate in the cleaning and upkeep of the office, bar, reserves, material, and equipment, as well as the dining room and its surrounding areas.
  • Be familiar with cleaning products and techniques related to the HACCP method.
  • Ensure billing for all drinks
  • Punctually perform any other activities necessary for the proper operation of the beverage service

Your profile

    Beyond technical skills, we are looking for partners who share the values and DNA of our restaurant/hotel, which are dear to us: team spirit, kindness, authenticity, generosity, and passion.

  • Fluency in several foreign languages, including English
  • BTS Complementary mention Sommellerie or other education in Sommellerie in specialized schools
  • 1st internship experience essential
