This month, Estrella Maillet and Philippine Freiman tested the Mama Shelter in the 15th arrondissement of Paris and the Shosh concept in the Sentier district. The duo at the head of Talent Developer have released their verdict: it’s good and it’s beautiful on social networks.

 

“At Mama, everything is Instagrammable! “Colourful reception, goodies on every floor, checkered tablecloths, vintage plates, a wall covered with LP records, champagne poured into a flask to take away, stamped with a “jackpot” sticker… As soon as you enter the neighbouring hotel at the Porte de Versailles (15th), there’s enough to feed a plethora of “stories”. Philippine Freiman, Director of Operations at Talent Developer, speaks of a “hotel counter-culture” and another way of receiving guests “pushed very far”. A bold choice that began in 2010, on rue de Bagnolet, in the 20th arrondissement of the capital. Today, Mama Shelter is a group, a brand, a state of mind and some fifteen locations in Europe and the United States. The original concept: a restaurant with rooms above. A reinvented inn of sorts, where comfort is the order of the day with so-called “5-star” bedding and regressive cuisine just right. During the health crisis, the hotel in the 15th arrondissement remains open and fans of the famous “parmentier de canard” can pick it up or have it delivered.

A pop-up inspired by the flavours of Jerusalem

The other discovery of Philippine Freiman and Estrella Maillet, founder of Talent Developer, is called Shosh. This new culinary concept was imagined by the team of the Shabour restaurant, which is currently closed due to Covid. The idea is to focus on “street food”, with a pop-up inspired by the flavours of Jerusalem. On the menu: a choice between two sandwiches. That’s it! But not just any sandwiches. These are made with a soft zaatar bread. They come in vegetarian or stewed versions. The veggie, Havita, is an omelette that combines herbs, parmesan, homemade labneh with Kalamata olives, cucumber pickles and tomatoes. As for the Sofrito, it combines in the same recipe, chicken, chickpeas and potatoes flavoured with turmeric, ginger and amba, shawarma-style cabbage, yoghurt and fresh herbs. At lunchtime, there is a crowd and therefore a queue: this gives you time to Instagram your visit to this prominent and fashionable pop-up. You can also have your food delivered.
